Ingredients
  

Main Ingredients

  • 2 cups cooked chicken, shredded Use rotisserie chicken for convenience.
  • 1 can white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth Ensure it's gluten-free if needed.
  • 1 cup cream or Greek yogurt This will determine the creaminess.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder Adjust for desired heat.
  • Salt and pepper to taste

Optional Toppings

  • avocado For added creaminess.
  • cilantro For garnish.
  • cheese Try Monterey Jack or cheddar.

Preparation

  • In a large pot, sauté the onion and garlic over medium heat until soft.

Cooking

  • Add the cooked chicken, white beans, corn, chicken broth, cumin, chili powder, salt, and pepper.
  • Stir and bring to a boil.
  • Reduce heat and let simmer for 15 minutes.
  • Stir in the cream or Greek yogurt until well combined.
  • Serve warm, garnished with optional toppings.

Notes

You can store leftover chili in an airtight container for 3-4 days in the refrigerator or freeze portions for up to 3 months. To reheat, thaw in the fridge.
