Gravy Ingredients

  • 0.5 cup all-purpose flour For dredging chicken.
  • 0.25 cup vegetable oil or bacon grease Butter or olive oil can be substituted.
  • 2 medium onions, thinly sliced
  • 1 piece bell pepper, diced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 0.5 cup heavy cream or evaporated milk Use coconut milk for dairy-free.
  • 2 pieces bay leaves

Garnish

  • 1 tbsp fresh parsley, chopped For garnish.

Preparation

  • Pat the chicken pieces dry with paper towels.
  • In a small bowl, combine garlic powder, onion powder, paprika, thyme, black pepper, salt, and cayenne pepper.
  • Season the chicken pieces generously on all sides and let them rest for 15-20 minutes at room temperature.

Dredging

  • In a shallow dish, mix the flour with 1 teaspoon of the seasoning mixture.
  • Dredge each piece of chicken in the flour mixture, shaking off excess.

Browning

  • Heat oil or bacon grease in a large skillet over medium-high heat until shimmering.
  • Brown chicken pieces skin-side down for 4-5 minutes per side and then transfer to a plate.

Creating Flavor Base

  • Reduce heat to medium and add sliced onions, cooking for 5-7 minutes until translucent.
  • Add bell pepper and cook for an additional 3 minutes.
  • Add minced garlic and cook for another 30 seconds.

Making Gravy

  • Sprinkle 3 tablespoons of seasoned flour over the vegetables and stir for 2 minutes.
  • Slowly pour in chicken broth while whisking to prevent lumps; add bay leaves.
  • Bring to a simmer until gravy thickens.

Simmering Chicken

  • Nestle the browned chicken into the gravy and cover, simmering for 40-45 minutes.

Finishing Touches

  • Remove chicken, stir in heavy cream or evaporated milk into the gravy, and simmer for 5-7 minutes.
  • Taste and adjust seasoning if necessary.

Serving

  • Return chicken to gravy or serve on a platter with gravy spooned over top and garnish with parsley.
