  • 8 pieces bone-in, skin-on chicken pieces (thighs and drumsticks work best) Choose chicken with a pinkish hue and firm texture.
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons paprika Smoked paprika adds extra depth.
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1.5 teaspoons salt Adjust to taste.
  • 0.25 teaspoon cayenne pepper Optional for heat.
  • 0.5 cup all-purpose flour For dredging the chicken.
  • 0.25 cup vegetable oil or bacon grease For frying.
  • 2 medium onions, thinly sliced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 0.5 cup heavy cream or evaporated milk For a creamy gravy.
  • 2 leaf bay leaves
  • 1 bunch fresh parsley, for garnish

Instructions
 

Preparation

  • 1. Pat your chicken pieces completely dry with paper towels.
  • 2. In a small bowl, combine garlic powder, onion powder, paprika, thyme, black pepper, salt, and cayenne pepper.
  • 3. Season chicken pieces on all sides, lifting the skin to season the meat.
  • 4. Let the seasoned chicken rest at room temperature for 15-20 minutes.
  • 5. Pour flour into a dish and add 1 teaspoon of seasoning to the flour. Dredge chicken in the flour, shaking off excess.
  • 6. Let the dredged chicken rest for 5 minutes.

Cooking

  • 1. Heat vegetable oil or bacon grease in a skillet over medium-high heat until shimmering.
  • 2. Work in batches to brown chicken, about 4-5 minutes each side, then remove and set aside.
  • 3. In the same pan, add sliced onions and cook until translucent, about 5-7 minutes.
  • 4. Add bell pepper and cook for another 3 minutes. Then add minced garlic and cook for 30 seconds.
  • 5. Sprinkle 3 tablespoons of seasoned flour over sautéed vegetables and stir for 2 minutes.
  • 6. Slowly pour in chicken broth while whisking to prevent lumps. Add bay leaves and bring to a simmer.
  • 7. Nestle the chicken pieces in the gravy, cover, and simmer for 40-45 minutes.
  • 8. Stir in heavy cream or evaporated milk and simmer for 5-7 minutes until desired gravy consistency.
  • 9. Serve the chicken garnished with parsley.

Notes

For the best flavor, allow the chicken to marinate overnight. Use skinless chicken for a lighter dish and substitute heavy cream with coconut milk for a dairy-free option.
