Ingredients
  

For the Chicken

  • 8 pieces bone-in, skin-on chicken thighs (approximately 3 pounds)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (sweet or smoked)
  • 0.5 teaspoon dried thyme
  • 3 tablespoons vegetable oil or bacon fat

For the Gravy

  • 2 medium onions, thinly sliced
  • 1 piece bell pepper, diced (green traditional, red for sweeter flavor)
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth (low sodium preferred)
  • 0.5 cup heavy cream or half-and-half
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 piece bay leaf
  • Salt and pepper to taste

Optional Garnishes

  • Fresh parsley, chopped
  • Green onions, sliced
  • Hot sauce for serving

Preparation

  • Pat the chicken thighs dry with paper towels. Mix together salt, pepper, garlic powder, onion powder, paprika, and dried thyme. Season the chicken thighs and let rest for 15-20 minutes.

Searing Chicken

  • Heat a skillet over medium-high heat, add oil, and sear chicken thighs for 5-6 minutes on skin-side, then flip for 3-4 minutes. Remove and set aside.

Making Gravy

  • In the same skillet, reduce heat, add onions and cook for 5-7 minutes. Add bell peppers, cook 3-4 minutes, then stir in garlic for 30 seconds.
  • Sprinkle flour over vegetables, stir for 2 minutes, then gradually add broth while stirring. Simmer for 5 minutes before adding cream, thyme, and bay leaf.
  • Nestle chicken back in the gravy, cover, and simmer for 35-40 minutes until chicken is tender.

Serving

  • Serve hot with garnishes and enjoy your flavorful dish.

Notes

For a lighter version, you can remove the skin or use boneless, skinless thighs. Thicken the gravy with cornstarch if desired.
