Ingredients
  

For the Chicken

  • 8 pieces bone-in, skin-on chicken thighs (approximately 3 pounds)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (sweet or smoked)
  • ½ teaspoon dried thyme
  • 3 tablespoons vegetable oil or bacon fat

For the Gravy

  • 2 medium onions, thinly sliced
  • 1 piece bell pepper, diced (green traditional, red for sweeter flavor)
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth (low sodium preferred)
  • ½ cup heavy cream or half-and-half
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 piece bay leaf
  • Salt and pepper to taste

  • Fresh parsley, chopped
  • Green onions, sliced

Instructions
 

Preparation

  • Pat the chicken thighs dry with paper towels. In a small bowl, mix together salt, pepper, garlic powder, onion powder, paprika, and dried thyme. Season the chicken thighs generously and let them rest at room temperature for 15-20 minutes.

Searing

  • Heat the oil or bacon fat in a skillet over medium-high heat. Sear the chicken thighs skin-side down for 5-6 minutes until golden, then flip and cook for 3-4 minutes before removing to a plate.

Flavor Base

  • In the same pan, add onions and cook for 5-7 minutes. Add bell pepper and cook for another 3-4 minutes. Stir in garlic and sauté for 30 seconds.

Making Gravy

  • Sprinkle the flour over the vegetable mixture and cook for 2 minutes. Gradually whisk in chicken broth, then simmer for 5 minutes. Stir in cream, thyme, bay leaf, and season to taste.

Simmering

  • Nestle the chicken back into the gravy skin-side up, cover, and let simmer for 35-40 minutes until fork-tender at 175°F.

Serving

  • Remove the bay leaf, adjust seasoning, and serve the chicken hot, garnished with parsley and green onions.
