For the Chicken

  • 1 tablespoon onion powder Dehydrated minced onion makes a good alternative with added texture.
  • 2 teaspoons paprika Smoked paprika can add depth if you enjoy a subtle smokiness.
  • ½ teaspoon cayenne pepper Adjust according to your heat preference or substitute with a dash of hot sauce.
  • ¼ cup all-purpose flour For dredging (gluten-free flour blend works as a 1:1 substitute).

For the Gravy

  • 3 tablespoons vegetable oil Canola or avocado oil can be used as alternatives.
  • 1 large yellow onion, thinly sliced Sweet onions provide a milder flavor if preferred.
  • 2 pieces bell peppers (1 green, 1 red), sliced Any color bell pepper works based on preference and availability.
  • 3 cloves garlic, minced Garlic paste (1 tablespoon) makes a convenient substitute.
  • 2 tablespoons butter Unsalted preferred, but salted works if you adjust seasoning accordingly.
  • 3 tablespoons all-purpose flour For creating the roux (again, gluten-free flour works as substitute).
  • 2 cups chicken broth Homemade stock elevates flavor, but quality store-bought works well too.
  • 1 cup buttermilk Regular milk with 1 tablespoon of lemon juice can substitute in a pinch.
  • 1 tablespoon Worcestershire sauce Soy sauce mixed with a touch of vinegar and sugar can work as alternative.
  • 2 sprigs fresh thyme 1 teaspoon dried thyme leaves if fresh isn’t available.
  • 1 leaf bay leaf Essential for authentic flavor, but can be omitted if unavailable.
  • 2 tablespoons fresh parsley, chopped Dried parsley (2 teaspoons) can be used but added earlier in cooking.

Preparation

  • Begin by patting your chicken pieces dry with paper towels. In a small bowl, combine the salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper.
  • Generously coat each chicken piece with the seasoning mixture, making sure to get under the skin. Let the seasoned chicken sit at room temperature for 15-20 minutes.
  • Place the flour in a shallow dish and lightly dredge each seasoned chicken piece, shaking off any excess.

Cooking

  • Heat the vegetable oil in a large Dutch oven over medium-high heat until shimmering. Brown the chicken skin-side down for 5-6 minutes until deeply golden brown; flip and cook for an additional 3-4 minutes.
  • Transfer the browned chicken to a plate and set aside. In the same pot, add the sliced onions and bell peppers, reduce heat to medium, and cook for 6-8 minutes until softened.
  • Add minced garlic and cook for an additional 30-60 seconds until fragrant. Add butter and allow it to melt, then sprinkle the flour over the vegetables.
  • Gradually pour in the chicken broth while whisking constantly. Once smooth, add buttermilk, Worcestershire sauce, thyme sprigs, and bay leaf. Bring to a gentle simmer.
  • Return the browned chicken pieces back into the gravy, skin-side up. Bring to a gentle simmer, then cover and cook for 25-30 minutes until chicken reaches an internal temperature of 165°F.

Finishing Touches

  • Remove thyme sprigs and bay leaf. Taste the gravy and adjust seasonings if necessary. Let it rested for 10 minutes before serving.
  • Sprinkle with fresh chopped parsley just before serving.
