  • 14 oz smoked sausage (kielbasa, andouille, or your preferred variety), sliced into ½-inch rounds
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch chunks
  • 2 cups baby potatoes, halved (or quartered if large)
  • 3 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley for garnish (optional)

Preparation

  • Preheat your oven to 425°F (218°C). Line a large rimmed baking sheet with parchment paper or aluminum foil for easier cleanup.
  • Slice your smoked sausage into ½-inch rounds and cut vegetables into even-sized pieces (about 1-inch).
  • In a large bowl, combine sliced smoked sausage and prepared vegetables. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, smoked paprika, salt, and pepper. Toss until everything is evenly coated.
  • Spread the seasoned sausage and vegetables in a single layer on your prepared baking sheet.
  • Place the sheet pan in your preheated oven and bake for 20-25 minutes, stirring once halfway through cooking time.
  • Remove from the oven, sprinkle with fresh chopped parsley if desired, and serve directly from the sheet pan.

Notes

For a lower-carb version, substitute potatoes with cauliflower florets. Turkey or chicken smoked sausage works beautifully for a leaner option.
