Ingredients
  

Main Ingredients

  • 1 whole whole chicken (3-4 lbs) Don't stress about the exact weight.
  • 2 tablespoons olive oil Or any other oil you have.
  • 1 teaspoon paprika This helps create crispy skin.
  • 1 teaspoon garlic powder Garlic makes everything better.
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme Or rosemary if preferred.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth Or water in a pinch.

Instructions
 

Preparation

  • Take the chicken out of the fridge 30 minutes before cooking.
  • Mix all spices together in a small bowl and rub them all over the chicken, inside and out.
  • Make sure to rub some spice mix inside the cavity.

Cooking

  • Pour 1/2 cup of chicken broth into the bottom of the crock pot.
  • Place the seasoned chicken breast-side up in the crock pot.
  • Cook on low for 6-8 hours or high for 3-4 hours.
  • Do not lift the lid during cooking.

Finishing Touch

  • Check for doneness by ensuring the internal temperature reaches 165°F.
  • If desired, broil for 3-5 minutes at the end to crisp the skin.

Notes

Store leftovers in airtight containers for 3-4 days in the refrigerator or up to 3 months in the freezer. Shred leftover meat for quick meals.
