  • 4 boneless, skinless chicken breasts You can use frozen chicken breasts with adjusted cooking time.
  • 1 cup rice White rice is recommended, but brown rice can be used with increased cooking time.
  • 2 cups chicken broth
  • 1 lemon (zested and juiced) Adds fresh lemon flavor.
  • 2 cloves garlic (minced)
  • 1 onion (chopped)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish Use to garnish before serving.

Instructions
 

Preparation

  • In a slow cooker, place the chicken breasts.
  • Add the rice, chicken broth, lemon zest, lemon juice, garlic, onion, thyme, rosemary, salt, and pepper.
  • Stir everything gently to combine.

Cooking

  • Cover the slow cooker and cook on low for 6-7 hours or until the chicken is cooked through and rice is tender.

Serving

  • Garnish with fresh parsley before serving.
  • Serve with a simple green salad or steamed vegetables, and crusty bread to soak up the flavorful broth.

Notes

For creamier texture, add cream cheese or sour cream in the last hour of cooking. You can modify the recipe by adding favorite vegetables, or adjusting herbs and spices to taste.
