Ingredients
  

For the Chicken

  • 4-6 pieces boneless, skinless chicken breasts (about 2-3 lbs) Adjust cooking time based on size.
  • 1 cup low-sodium chicken broth
  • 1 packet Italian seasoning mix Can be homemade.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper To taste.

  • 2 tablespoons cream cheese For added creaminess.
  • 1 tablespoon butter

Instructions
 

Preparation

  • Pat the chicken breasts dry with paper towels.
  • Mix Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper in a small bowl.
  • Rub olive oil over the chicken breasts and season generously with the spice mixture.
  • Optional: Let the seasoned chicken sit for 15-30 minutes.

Cooking

  • Pour the chicken broth into the slow cooker.
  • Add cream cheese and butter to the broth.
  • Place the seasoned chicken breasts in a single layer in the slow cooker.
  • Set the slow cooker to LOW and cook for 3-4 hours, depending on chicken breast size.

Finishing Touches

  • Check the internal temperature; it should reach 165°F.
  • Choose to keep the chicken whole, shred it, or chunk it for soups.
  • Taste and adjust seasoning using the cooking liquid for added flavor.
  • To thicken the sauce, mix cornstarch with cold water and stir into the cooking liquid.

Notes

Meal prep by portioning seasoned chicken into freezer bags. Keep cooked chicken in the fridge for 4-5 days or freeze for up to 3 months.
