Instructions
 

Preparation

  • Fill a large pot with salted water and bring to a boiling point.
  • Remove the rotisserie chicken from packaging, shred the meat, and set aside.
  • Dice the onion and mince the garlic.
  • Prepare any additional vegetables by cutting them into suitable sizes.

Cooking

  • Once the water boils, add salt and the pasta; cook according to package directions.
  • In a large skillet, heat olive oil over medium heat. Add the onions and cook until translucent.
  • Add garlic and sauté for another 30 seconds.
  • Pour in chicken broth and bring to a simmer. Then add cream, Italian seasoning, salt, and pepper.
  • Reduce the mixture for 2-3 minutes before adding Parmesan cheese gradually.

Combining and Finishing

  • Add drained pasta to the skillet and toss with the sauce.
  • Fold in shredded chicken and vegetables.
  • Garnish with parsley before serving.

Notes
