Ingredients
  

For the Beef and Marinade

  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons soy sauce substitute coconut for a gluten-free option
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda secret to tender beef
  • 1 tablespoon sesame oil adds a nutty aroma

For the Noodles and Sauce

  • 8 ounces Asian-style wheat noodles substitute rice noodles for gluten-free
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, finely minced
  • 1 inch piece of ginger, grated for zingy warmth
  • 2 scallions white parts minced, green parts sliced diagonally for garnish
  • 1 red bell pepper, julienned for sweet crunch and vibrant color
  • 2 cups baby bok choy or spinach, roughly chopped

For the Sauce

  • 1/3 cup low-sodium beef broth vegetable broth works in a pinch
  • 3 tablespoons oyster sauce vegetarian mushroom sauce as alternative
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar for bright acidity
  • 1-2 teaspoons chili garlic sauce adjust according to your heat preference
  • 1 teaspoon brown sugar
  • 1/2 teaspoon five-spice powder for complex aromatic depth

Instructions
 

Preparation

  • Slice the beef against the grain into thin strips about 1/8-inch thick.
  • In a medium bowl, combine beef with soy sauce, cornstarch, baking soda, and sesame oil. Mix thoroughly.
  • Let the beef marinate for 10 minutes.
  • Prepare sauce by combining beef broth, oyster sauce, hoisin sauce, rice vinegar, chili garlic sauce, brown sugar, and five-spice powder in a bowl. Whisk until smooth.
  • Boil water for the noodles. Cook according to package instructions.
  • Drain and rinse cooked noodles under cold water to stop cooking.

Cooking

  • Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat.
  • Add marinated beef in a single layer and sear undisturbed for 30 seconds; stir-fry for another minute until about 80% cooked. Remove from wok.
  • In the same wok, add 1 tablespoon of oil. Stir-fry garlic, ginger, and white parts of scallions for 30 seconds.
  • Add bell pepper and stir-fry for another minute before adding bok choy or spinach, cooking for just 30 seconds.
  • Return beef to wok, pour in sauce, and bring to a simmer.
  • Add cooked noodles, toss everything together for 1-2 minutes until noodles absorb sauce.

Serving

  • Garnish with reserved green scallion parts and serve immediately.

Notes

Consider using pre-minced garlic and ginger to cut down prep time. Leftovers can be stored separately to maintain texture.
