One Pan Garlic Parmesan Chicken Pasta

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts (about 680g) Make sure they are evenly sized for even cooking.
  • 8 oz penne or rotini pasta You can use either type based on your preference.
  • 4 cloves fresh garlic, minced Fresh garlic enhances the flavor.
  • 2 cups low-sodium chicken broth (480ml) Use low-sodium for better control of salt content.
  • 1 cup heavy cream (240ml) This creates the creamy sauce.
  • 1 cup freshly grated Parmesan cheese (100g) Freshly grated cheese melts better than pre-grated.
  • 2 tbsp olive oil (30ml) For cooking the chicken.
  • 2 cups fresh spinach (optional, about 60g) Can be added for extra color and nutrition.

Instructions
 

Cooking the Chicken

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper.
  • Cook for about 6 minutes per side until golden brown.
  • Remove the chicken from the pan and let it rest.

Cooking the Pasta

  • In the same skillet, sauté the minced garlic for about 1 minute until fragrant.
  • Add the pasta and chicken broth to the skillet and bring to a boil.
  • Cover the pan and let it simmer for about 10 minutes until the pasta is al dente.

Finishing Touches

  • Lower the heat and stir in the heavy cream and Parmesan cheese until well combined.
  • Slice the rested chicken and return it to the skillet.
  • Add spinach if using and gently toss to coat with the sauce.

Notes

Serve warm, garnished with extra Parmesan cheese if desired. This dish pairs well with a side salad or crusty bread.
