Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts Can substitute with chicken thighs, turkey cutlets, or tofu.

For the Sauce

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream Substitute coconut cream for keto or paleo.
  • 1 cup grated Parmesan cheese Substitute with almond flour for low-carb.
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tablespoon Italian seasoning
  • to taste salt and pepper Season generously.

Preparation

  • Trim excess fat from chicken and pat dry with paper towels.
  • Season chicken with salt, pepper, and Italian herbs.

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Sear chicken for 5-6 minutes on each side until golden brown. Remove and set aside.
  • In the same skillet, sauté minced garlic until fragrant.
  • Add chicken broth, heavy cream, and sun-dried tomatoes, and simmer for 5 minutes.
  • Stir in grated Parmesan cheese until the sauce thickens.

Finishing Touches

  • Check that the internal temperature of the chicken has reached 165°F using a meat thermometer.
  • Let the chicken rest for 5 minutes before slicing.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently with a splash of chicken broth. For added spice, incorporate hot sauce or red pepper flakes.
