Classic Lemon Sorbet Base

  • 2 cups fresh lemon juice (approximately 12-15 lemons for optimal tartness)
  • 1 cup granulated sugar (or substitute with 3/4 cup maple syrup)
  • 2 cups filtered water (room temperature for better sugar dissolution)
  • 1 tablespoon lemon zest (finely grated from organic lemons)
  • 1/8 teaspoon sea salt (enhances flavor complexity)
  • 1/4 teaspoon xanthan gum (optional for ultra-smooth texture)

Preparation

  • Begin by selecting premium lemons with thin, bright yellow skins indicating peak ripeness and maximum juice content. Roll each lemon on the counter while applying pressure to break internal membranes, increasing juice yield by approximately 20%. Juice the lemons through a fine-mesh strainer to remove pulp and seeds, then measure exactly 2 cups of fresh juice.
  • In a medium saucepan, combine granulated sugar with 2 cups of filtered water over medium heat. Stir continuously until sugar completely dissolves, creating a clear simple syrup. Allow the syrup to cool to room temperature.
  • Mix the cooled simple syrup with fresh lemon juice, lemon zest, and sea salt in a large mixing bowl. Adjust sweetness as needed – it should taste slightly sweeter than desired since freezing dulls flavor perception.
  • Pour the mixture into your Ninja Creami pint container, leaving 1/4 inch space below the max fill line to allow for expansion during freezing. Secure the lid tightly and place on a flat freezer shelf.

Freezing & Processing

  • Freeze for a minimum of 24 hours at 0°F (-18°C).
  • Remove the frozen pint directly from the freezer and immediately place it in the Ninja Creami outer bowl. Select the 'Sorbet' setting and allow the machine to complete its 90-second processing cycle.
  • If your sorbet appears crumbly after the initial spin, use the 'Re-spin' function immediately and add 1-2 tablespoons of cold water or lemon juice if needed.

Notes

For best results, use fresh ingredients and allow sufficient freezing time. Consider preparing different flavors by substituting lemon with lime or adding fruits.
