Preparation

  • Remove the pork tenderloin from refrigeration 15 minutes before cooking to reach room temperature.
  • Slice the tenderloin against the grain into thin strips, approximately 1/4-inch thick.
  • In a medium bowl, combine the sliced pork with cornstarch until each piece is lightly coated.
  • Season with a pinch of salt and white pepper, then allow to rest.

Vegetable Prep

  • Wash all vegetables under cold running water and pat dry.
  • Cut broccoli into small florets, and julienne the carrot.
  • Slice the bell pepper into thin strips.
  • Halve the baby corn and prepare green onions.

Mix the Sauce

  • In a bowl, whisk together soy sauce, honey, and rice vinegar until fully combined.
  • Add garlic and ginger, and drizzle in sesame oil while whisking.
  • Adjust sweetness to taste.

Cook the Pork

  • Heat vegetable oil in a large skillet or wok over high heat.
  • Add marinated pork in a single layer, cooking undisturbed for 90 seconds, then stir-fry until cooked through.
  • Remove cooked pork and cover loosely.

Stir-Fry the Vegetables

  • Add vegetables to the hot skillet, starting with harder vegetables first.
  • Stir-fry until vegetables are tender-crisp, adding water or broth if necessary.

Combine and Finish

  • Return pork to the skillet, pour sauce over the mixture and stir quickly.
  • Cook for an additional 30-60 seconds until the sauce thickens slightly.
  • Taste and adjust seasoning before serving.
  • Garnish with sesame seeds and chopped green onions if desired.

Notes
