Base Ingredients

  • 2 packages instant ramen noodles Discard or save seasoning packets for another use
  • 2 tablespoons vegetable oil Or sesame oil for more authentic flavor
  • 3 cloves garlic, minced The aromatic foundation that adds depth
  • 1 tablespoon fresh ginger, grated For a warming, slightly spicy kick
  • 2-3 cups mixed vegetables Such as bell peppers, carrots, broccoli, snap peas, and mushrooms
  • 1 cup protein of choice (diced cubed chicken, beef, tofu, or shrimp)

Sauce Ingredients

  • 3 tablespoons soy sauce Or tamari for gluten-free option
  • 1 tablespoon oyster sauce Adds richness and umami depth
  • 1 teaspoon brown sugar or honey Balances saltiness with subtle sweetness
  • 1 tablespoon rice vinegar Adds brightness and acidity
  • 1-2 teaspoons sriracha or chili oil Adjust according to your spice preference
  • 1 teaspoon sesame oil For a finishing touch and nutty aroma

Instructions
 

Preparation

  • Cook the instant ramen noodles according to the package instructions, but reduce the cooking time by about 1 minute. Once cooked, drain and rinse under cold water.
  • Whisk together the soy sauce, oyster sauce, brown sugar or honey, rice vinegar, sriracha, and half of the sesame oil in a small bowl until the sugar is dissolved.

Cooking

  • Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat, add your protein of choice, and cook until done (3-4 minutes for chicken or beef, 2 minutes for shrimp, 2-3 minutes for tofu). Remove and set aside.
  • Add another tablespoon of oil, then stir-fry minced garlic and ginger for 30 seconds until aromatic. Add mixed vegetables starting with those that take longest to cook.
  • Stir-fry the vegetables for 3-4 minutes until bright in color and crisp-tender.
  • Return the cooked protein to the wok, add the drained noodles and the prepared sauce. Toss everything together for 1-2 minutes until well coated.
  • Drizzle the remaining sesame oil over the stir fry and toss once more. Transfer to serving bowls.
  • Garnish with the optional garnishes like green onions, toasted sesame seeds, cilantro, and serve hot.

Notes

For a creamier sauce, add a dollop of peanut butter to the sauce mixture. You can prepare the vegetables and sauce ahead of time to ease cooking during busier nights.
