Ingredients

  • 1 cup 240 ml unsweetened almond milk or Fairlife skim milk
  • 1 scoop 30g vanilla or strawberry protein powder (whey or plant-based)
  • 1/2 medium ripe banana
  • 1/2 cup 75g frozen strawberries
  • 1/2 tsp vanilla extract
  • 1 −2 tbsp powdered erythritol or monk fruit sweetener optional, to taste

Instructions

  • Create the Base: In a small bowl or blender, combine the milk, protein powder, and vanilla extract. Whisk or blend until completely smooth to ensure there are no powdery clumps. If using an optional sweetener, add it here.
  • Prepare the Pint: Slice the half banana and add the slices to the bottom of the Ninja Creami pint. Add the frozen strawberries on top.
  • Combine and Freeze: Pour the liquid protein base over the fruit in the pint. Secure the storage lid and place the pint on a level surface in your freezer. Freeze for at least 24 hours.
  • Process: Once frozen solid, remove the pint from the freezer and take off the lid. Place the pint into the outer bowl, secure the processing lid, and lock it into the Ninja Creami machine. Select the LITE ICE CREAM setting.
  • Check and Re-spin: After the first spin, the texture might appear crumbly. This is normal. Add 1 tablespoon of almond milk or regular milk and process again using the RE-SPIN function. If it's still crumbly, add one more tablespoon of liquid and re-spin again. The result should be smooth and creamy.
  • Serve: Serve immediately for a perfect soft-serve consistency.

Notes

  • Why This is Healthy: This recipe avoids the high-fat (heavy cream) and high-sugar bases of traditional ice cream. Instead, it gets its creaminess from the blended fruit and protein powder, and its sweetness from natural sources.
  • Troubleshooting Texture: Don't be discouraged if your ice cream is a dry, powdery puck after the first spin. The "Re-spin" function with a small amount of added liquid is the key to achieving a creamy texture.
  • Variations: Feel free to experiment!
    • Chocolate Peanut Butter: Use chocolate protein powder, PBfit powder instead of fruit, and a sugar-free chocolate milk base.
    • Mango Sorbet: Use mango chunks and a clear liquid like coconut water instead of milk and protein powder.
    • Mint Chip: Use vanilla or chocolate base, a few drops of peppermint extract, and add sugar-free chocolate chips as a "mix-in" after processing.
