For Venison Chili

  • 2 pounds ground deer meat
  • 3 tablespoons olive oil
  • 2 medium onions, diced
  • 4 cloves garlic, minced
  • 2 jalapeños, minced (optional) for heat
  • 3 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground coriander
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 2 tablespoons tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 2 cups beef or venison stock
  • 2 tablespoons maple syrup (balances gaminess)

For Venison Meatballs with Mushroom Gravy

  • 1.5 pounds ground deer meat
  • cup finely chopped onion
  • 3 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • cup breadcrumbs
  • 1 large egg
  • 2 tablespoons chopped parsley
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian herbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter for gravy
  • 1 pound mushrooms, sliced (cremini or baby bella)
  • 2 cloves garlic, minced for gravy
  • 2 tablespoons flour for gravy
  • 2 cups beef or venison stock for gravy
  • 1 tablespoon soy sauce for gravy
  • 1 tablespoon fresh thyme leaves

  • 2 tablespoons heavy cream (optional for gravy)

Instructions
 

Make Venison Burgers

  • In a large bowl, combine ground deer meat with egg, breadcrumbs, Worcestershire sauce, garlic, thyme, paprika, salt, and pepper. Mix gently without over-mixing.
  • Form into 4 patties about ¾-inch thick. Make a thumb depression in the center.
  • Refrigerate patties for 20 minutes.
  • Caramelize onions in olive oil over medium-low heat for 15-20 minutes, adding brown sugar in the last 5 minutes.
  • Cook burgers in a hot skillet or grill for 3-4 minutes per side until desired doneness.
  • Let rest for 3-5 minutes before assembling on buns with toppings.

Make Venison Chili

  • Brown ground deer meat in olive oil in batches, setting aside cooked meat.
  • Sauté onions and bell peppers until soft, followed by garlic and jalapeños.
  • Stir in spices and tomato paste, cooking for a few minutes.
  • Return meat, add tomatoes, beans, stock, and maple syrup. Simmer for 45-60 minutes.
  • Adjust seasonings and serve with desired toppings.

Make Venison Meatballs with Mushroom Gravy

  • Combine ground deer meat, onion, garlic, Parmesan, breadcrumbs, egg, parsley, Worcestershire sauce, and herbs. Mix gently.
  • Form meatballs and chill for 15 minutes.
  • Brown meatballs in olive oil in batches. Set aside.
