Preparation

  • Gather and prep all ingredients: dice the onion and bell pepper, mince the garlic, and measure out liquids and seasonings.
  • Fill a large pot with water for the noodles and set it on the stove.

Cooking the Ground Beef

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add diced onion and cook for 2-3 minutes until translucent. Add minced garlic and cook for another 30 seconds.
  • Add ground beef, breaking it apart, and season with salt and pepper. Let it brown slightly before stirring.

Cooking the Noodles

  • Bring water to a boil, adding salt and egg noodles. Cook according to package directions, usually 6-8 minutes.
  • Undercook by 1-2 minutes for optimal texture when mixed with sauce.

Completing the Beef Sauce

  • Once beef is mostly browned, add bell pepper and cook for 2 minutes until softened.
  • Stir in tomato paste and cook for 1 minute. Pour in beef broth, soy sauce, Worcestershire sauce, and seasoning. Bring to a simmer for 5 minutes.
  • Add frozen peas or mixed vegetables if using, and allow them to heat through.

Combining and Finishing

  • Drain noodles and add them directly to beef mixture, tossing gently to coat.
  • Simmer together for 1-2 minutes for flavors to meld.

Serving

  • Remove from heat and let rest before serving. Divide into bowls and garnish with parsley or green onions.
