  • 1 cup adobo sauce Made with dried chiles like ancho, guajillo, and chipotle.
  • 1 cup Indian goat masala A mix of spices including cumin, coriander, and cardamom.
  • 1 cup Mediterranean marinade Olive oil, garlic, rosemary, oregano, lemon zest, salt, and pepper.

Main Ingredients

  • 2 lbs goat meat Cuts such as shoulder or leg preferred for tenderness.
  • 1 medium onion Diced.
  • 3 cloves garlic Minced.
  • 2 large tomatoes Diced.
  • 1 cup coconut milk For curry recipes.
  • 2 cups vegetable or chicken stock For stews.
  • 1 medium lime Juice for marinades.

Instructions
 

Preparation

  • Prepare the spice blends by toasting spices and grinding them.
  • Marinate goat meat in the spices for at least 2 hours, preferably overnight.

Cooking

  • Sear the marinated goat meat in a heavy pot until browned.
  • Add diced tomatoes, coconut milk, and stock. Simmer over low heat for 1.5 to 2 hours until tender.
  • Stir in the remaining ingredients as needed and adjust seasoning.

Serving

  • Serve with rice, bread, or salads.
