  • 1 tsp xanthan gum Acts as a binder to prevent crumbling.
  • 1/2 cup coconut oil or vegan butter Dairy-free alternative.
  • 1/4 cup natural sweetener (maple syrup, honey, or date paste) Adds sweetness without refined sugar.
  • 1/2 cup dairy-free milk Use almond milk or oat milk.
  • 1/4 tsp salt Enhances flavor.

For the Filling

  • 1 cup fruit preserves or chocolate spread Customize according to preference.

Preparation of Dough

  • In a food processor, combine the gluten-free flour blend, xanthan gum, and salt. Add the cold coconut oil and pulse until it resembles coarse crumbs.
  • Add the natural sweetener and dairy-free milk gradually while mixing until the dough forms. Be careful not to overmix.
  • Divide the dough into two discs, wrap in plastic, and refrigerate for at least 30 minutes.

Shaping and Filling

  • On a floured surface, roll out one disc to about 1/8-inch thickness and cut into rectangles.
  • Place a spoonful of your chosen filling in the center of half the rectangles.
  • Moisten the edges with water and place another rectangle on top, sealing the edges with a fork.

Baking

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Transfer the pop tarts to the prepared baking sheet and bake for 15-20 minutes until golden.
  • Let cool before glazing or serving.

Notes

Feel free to experiment with different fillings, such as nut butters or flavored tofu for vegan options. Pop tarts can be decorated with a simple glaze or natural food colors to enhance appearance.
