Preparation

  • Preheat your oven to 425°F (220°C).
  • Grease 4 small ramekins with butter or coconut oil and lightly dust them with cocoa powder.

Cooking

  • In a microwave-safe bowl, combine the butter and chocolate chips.
  • Microwave in 30-second intervals, stirring each time, until smooth and fully melted. Let it cool slightly.
  • In a mixing bowl, whisk together the eggs, egg yolks, sugar, and vanilla extract until frothy and light in color.
  • In a separate bowl, sift together the gluten-free flour, cocoa powder, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Add the melted chocolate mixture and stir until smooth.
  • Divide the batter evenly among the prepared ramekins.
  • Place the ramekins on a baking sheet and bake for 12–14 minutes. The edges should be firm, but the center should remain soft.
  • Let the lava cakes cool for 2 minutes before gently running a knife around the edges to loosen them.
  • Invert each ramekin onto a plate and serve immediately.
  • Pair with a scoop of vanilla ice cream or a dusting of powdered sugar for an extra touch.
