Pasta Ingredients

  • 8 oz pasta (fettuccine, linguine, or spaghetti)
  • 4 tablespoons unsalted butter
  • 6-8 cloves fresh garlic, minced (about 2-3 tablespoons)
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup reserved pasta water
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, finely chopped
  • to taste Salt
  • to taste freshly ground black pepper

Instructions

Preparation

  • Gather all your ingredients in one place and prepare them: mince the garlic, grate the Parmesan cheese, and chop the parsley.
  • Pro Tip: Let minced garlic rest for 10 minutes before cooking to enhance its flavor.

Cooking the Pasta

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
  • Pro Tip: Set a timer for 2 minutes less than the package suggests for optimal al dente texture.

Reservig Pasta Water

  • Before draining, reserve at least 1/2 cup of pasta water for the sauce.
  • Pro Tip: Place a measuring cup in your colander as a reminder to reserve the water.

Create the Garlic Base

  • In a skillet, heat the butter and olive oil over medium heat. Once melted, add minced garlic and red pepper flakes.
  • Cook for 1-2 minutes until fragrant and golden, but watch closely to prevent burning.

Combine Pasta with Sauce

  • Drain the pasta and add it to the skillet with the garlic butter sauce immediately.
  • Toss the pasta to coat thoroughly.

Add the Cheese

  • Reduce heat to low and gradually add Parmesan while tossing to blend into the pasta.
  • Add reserved pasta water as needed for a smooth consistency.

Adjust Consistency and Season

  • Adjust the sauce with more pasta water if too dry, and season with salt and pepper to taste.

Finish and Garnish

  • Remove from heat and stir in chopped parsley, garnishing with remaining cheese and parsley when serving.
  • Pro Tip: Drizzle high-quality olive oil before serving for extra flavor.

Notes

For a lighter dish, substitute half the butter with olive oil. Use gluten-free pasta if desired. Store leftovers in an airtight container for up to 3 days and reheat with a splash of water or milk.
