For the Steak Bites

  • 1.5 pounds sirloin steak (trimmed and cut into 1-inch cubes)
  • 2 tablespoons olive oil (divided)
  • 3 tablespoons butter
  • 6 cloves garlic (minced)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary (finely chopped)
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • Salt and freshly ground black pepper to taste

For the Potatoes

  • 1 pound baby potatoes (halved or quartered depending on size)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried Italian herbs
  • 0.5 teaspoon paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions
 

Preparation

  • Wash the baby potatoes thoroughly under cold water and cut them into halves or quarters.
  • Soak the cut potatoes in cold water for 10 minutes, then pat them dry.

Roasting Potatoes

  • Preheat the oven to 425°F (220°C).
  • Toss the potatoes with olive oil, minced garlic, Italian herbs, paprika, salt, and pepper.
  • Spread the potatoes in a single layer on a baking sheet and roast for 20-25 minutes, tossing halfway through.

Preparing the Steak

  • Pat the cubed steak dry with paper towels and season generously with salt and pepper.

Cooking Steak Bites

  • Heat 1 tablespoon of olive oil in a large skillet over high heat until smoking.
  • Add half the steak cubes in a single layer and cook for 1-2 minutes per side. Transfer to a plate and repeat for the remaining steak.

Making the Garlic Butter Sauce

  • Reduce heat to medium and return all steak to the skillet.
  • Add butter, minced garlic, thyme, and rosemary. Cook for 1-2 minutes, tossing to coat.
  • Add soy sauce and Worcestershire sauce and toss to incorporate.

Combine and Serve

  • Once the potatoes are golden and tender, fold them into the skillet with steak and sauce.
  • Garnish with chopped parsley and let rest for 2-3 minutes before serving.

Notes

For a spicy variation, add red pepper flakes to the butter sauce. For best results, avoid overcrowding the pan while cooking steak and ensure ingredients are room temperature before cooking.
