  • 2 pounds boneless, skinless chicken breasts
  • 16 ounces cream cheese, softened can substitute with Neufchâtel for a lighter option
  • 2 tablespoons ranch seasoning mix homemade or store-bought
  • 8 ounces bacon, cooked and crumbled turkey bacon works as a leaner alternative
  • 1 cup shredded cheddar cheese sharp cheddar provides the most vibrant flavor
  • 3 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional, for heat lovers
  • 1 tablespoon olive oil if using stovetop method

Preparation

  • Season your chicken breasts with a pinch of salt and pepper on both sides.
  • If using the stovetop method, heat olive oil in a large skillet over medium heat and cook chicken for 5-7 minutes per side until the internal temperature reaches 165°F.
  • For slow cooker or Instant Pot methods, place raw chicken directly in the cooking vessel.

Cooking

  • Stovetop Method: Remove cooked chicken from skillet and let it rest for 5 minutes. Shred the chicken and set aside. In the same skillet, add cream cheese and ranch seasoning, stirring until smooth. Return chicken and mix thoroughly.
  • Slow Cooker Method: Place chicken breasts, cream cheese, and ranch seasoning in the slow cooker. Cook on low for 6 hours or high for 4 hours. Shred the chicken in the slow cooker and stir until combined.
  • Instant Pot Method: Add chicken with chicken broth. Place cream cheese and ranch seasoning on top. Seal the lid, cook on high pressure for 10 minutes, then do a 5-minute natural release. Shred chicken and stir until thick.

Final Steps

  • Fold in ¾ of the crumbled bacon, ¾ cup of cheese, and most of the green onions. Mix until distributed.
  • Transfer to a serving dish, top with remaining cheese, bacon crumbles, and green onions. Broil for 2-3 minutes to melt cheese until bubbly.

Notes

For a spicier version, add a diced jalapeño or a few dashes of hot sauce. Cook bacon the day before to cut preparation time.
