Preparation

  • Prepare your workspace by laying out all ingredients at room temperature and lining a large baking sheet with parchment paper.
  • Toast pecans in the oven at 350°F for 8-10 minutes until fragrant. Let cool slightly and chop into pieces.

Caramel and Chocolate Mixture

  • Heat granulated sugar in a heavy-bottomed saucepan over medium heat without stirring until it melts and reaches a deep amber color (300-320°F).
  • Remove from heat and whisk in heavy cream. The mixture will bubble; stir until smooth.
  • Whisk in butter until melted, then stir in vanilla extract and sea salt.
  • Add chopped dark chocolate and stir until melted and smooth.

Incorporating Pecans and Shaping

  • Fold toasted pecans into the chocolate mixture gently.
  • Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them 2 inches apart.

Setting

  • Allow pralines to set at room temperature for 45-60 minutes until firm. Do not refrigerate.
