Ingredients
  

For the Chicken

  • 4-6 pieces bone-in, skin-on chicken thighs or breasts (about 2-3 pounds) Free-range or organic chicken is preferred for more flavor.
  • 2 tablespoons olive oil or butter
  • 1 tablespoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika (sweet or smoked)
  • Salt and freshly ground black pepper to taste

For the Gravy

  • 3 tablespoons butter or chicken drippings
  • 3 tablespoons all-purpose flour For gluten-free, use cornstarch instead.
  • 2 cups chicken broth (low-sodium preferred) Can also use homemade stock.
  • 1/2 cup heavy cream or milk Substitute with coconut cream for dairy-free.
  • 1 teaspoon dried sage
  • 1/2 teaspoon ground black pepper
  • Salt to taste

Aromatics (Optional but Recommended)

  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup diced carrots
  • 1/2 cup diced celery

Instructions
 

Preparation

  • Begin by patting your chicken pieces completely dry with paper towels.
  • Combine garlic powder, dried thyme, paprika, salt, and pepper in a small bowl. Season the chicken generously on all sides.
  • Let the chicken rest at room temperature for 15-30 minutes, if possible.

Searing Chicken

  • Heat olive oil or butter in a large skillet over medium-high heat.
  • Place the chicken skin-side down and sear for 5-6 minutes until golden brown. Turn and sear the other side for 2-3 minutes.

Adding Aromatics

  • Remove the chicken and add diced onions to the pan, sautéing for 3-4 minutes.
  • Add minced garlic and cook for another 30 seconds. Then add diced carrots and celery for 3-4 minutes.

Finishing Cooking

  • Return the chicken to the pan, nestling skin-side up. Cover and reduce heat for 20-30 minutes until the chicken is cooked through.

Making Gravy

  • Remove chicken and add butter to the drippings if needed. Sprinkle flour and cook for 2-3 minutes to create a roux.
  • Gradually add chicken broth while whisking to prevent lumps. Bring to a simmer and cook until thickened.
  • Whisk in heavy cream and adjust seasonings before serving.

Finishing Touches

  • Return the chicken to the pan, spooning gravy over it. Heat for a couple of minutes before serving.

Notes

Serve with mashed potatoes, rice, or egg noodles for a complete meal. Garnish with fresh herbs before serving.
