Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken breast, thinly sliced Ensure pieces are of uniform thickness for even cooking.

For the Stir Fry

  • 2 tablespoons vegetable oil, divided Use one for cooking chicken, one for vegetables.
  • 2 packages instant ramen noodles (3 oz each), discard seasoning packets Cook slightly under the package instructions.
  • 1 cup sliced bell peppers (any color)
  • 1 cup sliced carrots
  • 1 cup snap peas or snow peas
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 medium green onions, sliced (white and green parts separated)
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional) Add for heat.

For Garnish

Instructions
 

Preparation

  • Bring a medium pot of water to a boil. Add the ramen noodles and cook for 2 minutes. Drain and rinse with cold water.
  • In a small bowl, whisk together soy sauce, honey (or brown sugar), rice vinegar, sesame oil, and red pepper flakes. Set aside.

Cooking

  • Heat 1 tablespoon of oil in a large wok or skillet over high heat. Add sliced chicken and cook for 3-4 minutes until golden brown. Transfer to a plate.
  • In the same wok, add remaining oil, minced garlic, grated ginger, and white parts of green onions. Stir fry for 30 seconds.
  • Add bell peppers and carrots, stir-frying for 2 minutes. Then add snap peas and cook for 1 minute.
  • Return cooked chicken to the wok, add drained ramen, and pour sauce over everything. Toss continuously for 1-2 minutes until heated through.

Serving

  • Transfer to serving bowls. Garnish with green parts of green onions and sesame seeds. Serve immediately.

Notes

For a quicker version, break noodles into smaller pieces before cooking. Customize ingredients based on preference.
