These homemade beef sausage rolls are juicy, cheesy, and wrapped in golden, flaky puff pastry. Inspired by bakery-style rolls, they’re easy to make, freezer-friendly, and perfect for parties, snacks, or family dinners.

- 1 lb 500 g ground beef – preferably 20% fat for juiciness
- 1 medium brown onion – grated
- 1 cup panko breadcrumbs – soaked in onion juice
- 1 large egg – beaten
- 2 cloves garlic – minced
- 1 beef stock cube – crumbled
- 1/4 cup pickled jalapeños – chopped or substitute fresh chili
- 1 cup cheddar cheese – grated
- 1/2 cup parmesan cheese – finely grated
- 2 sheets puff pastry – thawed butter-based preferred
- 1 egg yolk – beaten for brushing
- 2 tbsp sesame seeds – for topping
- 1/2 tsp salt – adjust to taste
- 1/2 tsp black pepper – freshly cracked
Prepare the onion & breadcrumbs: Grate onion into a bowl. Add panko breadcrumbs and stir so they soak up the onion juice. Let sit for 5 minutes.
Make the filling: In a large mixing bowl, combine ground beef, onion–breadcrumb mix, garlic, stock cube, egg, salt, and pepper. Mix gently until combined.
Add cheese & jalapeños: Fold in cheddar, parmesan, and chopped jalapeños until evenly distributed.
Shape & wrap: Divide mixture into 2 logs. Place each on a puff pastry sheet, roll up tightly, and seal edges.
Finish: Brush tops with beaten egg yolk, score with a knife, and sprinkle with sesame seeds.
Bake (Stage 1): Place rolls on lined baking tray. Bake at 400°F (200°C) for 25 minutes.
Bake (Stage 2): Transfer rolls to a wire rack set over the tray. Bake another 15 minutes until golden and crisp.
Cool & serve: Rest 10 minutes before slicing. Serve warm with ketchup, BBQ sauce, or spicy mayo.

For smaller party-sized sausage rolls, cut each large roll into 6–8 pieces before baking. Reduce baking time by ~5 minutes.

Freezer-friendly: Freeze unbaked rolls on a tray, then transfer to freezer bags. Bake from frozen, adding 5–10 minutes to cooking time.
