Ingredients
  

For the Beef Bites

  • 1.5 pounds beef sirloin or tenderloin, cut into 1-inch cubes Look for well-marbled meat for the juiciest results.
  • 3 tablespoons olive oil Extra virgin preferred for richer flavor.
  • 4 cloves garlic, minced finely
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce Low-sodium option available.
  • 1 teaspoon fresh rosemary, chopped Or ½ teaspoon dried.
  • 1 teaspoon fresh thyme leaves Or ½ teaspoon dried.
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon sea salt
  • 2 tablespoons butter For finishing.

For the Dipping Sauce

  • ¼ cup sour cream Greek yogurt makes a great substitute.
  • 2 tablespoons horseradish, prepared
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • pinch ground black pepper

Instructions
 

Preparation

  • Cut your beef into consistent 1-inch cubes, trimming excess fat but leaving some marbling for flavor. Pat the cubes dry with paper towels.
  • In a medium bowl, combine the olive oil, minced garlic, Worcestershire sauce, soy sauce, chopped rosemary, thyme leaves, smoked paprika, black pepper, and salt. Whisk until well incorporated.
  • Add the beef cubes to the marinade, ensuring each piece is thoroughly coated. Cover with plastic wrap and refrigerate for at least 30 minutes.
  • While the beef marinates, combine sour cream, horseradish, chopped chives, lemon juice, salt, and pepper in a small bowl. Stir until smooth and refrigerate.

Cooking

  • Heat a cast-iron skillet over medium-high heat until very hot.
  • Remove the beef from the marinade, allowing excess liquid to drip off. Sear the beef cubes in batches, 1-2 minutes per side, until a rich brown crust forms.
  • In the last minute of cooking, add the butter to the pan and baste the beef bites.
  • Transfer the beef bites to a serving platter and let them rest for 3-5 minutes. Serve warm with the horseradish dipping sauce.
