Ingredients
  

For the Chicken

  • 1 lb Chicken tenderloins
  • 1 cup Panko breadcrumbs
  • as needed cups Oil for frying
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste

For the Bang Bang Sauce

  • 1/2 cup Mayonnaise
  • 1/4 cup Sweet chili sauce
  • 1-2 tbsp Sriracha sauce Adjust for spice level
  • 1 tsp Garlic powder

Preparation

  • Preheat the oil in a deep fryer or large skillet.
  • Season the chicken tenderloins with salt and pepper.
  • Dredge the chicken in panko breadcrumbs until well coated.

Cooking

  • Fry the chicken in the hot oil until golden brown and cooked through, about 3-4 minutes per side.

Sauce Preparation

  • In a bowl, mix together mayonnaise, sweet chili sauce, Sriracha, and garlic powder to make the bang bang sauce.

Serving

  • Drizzle the bang bang sauce over the fried chicken. Serve hot.

Notes

For extra crunch, consider double coating the chicken: dredge it in flour first, then in egg, and finally in panko breadcrumbs. Store leftovers in an airtight container in the fridge for up to two days.
